The Sierra Salinas winery was founded in 2000 in Villena, in the DO of Alicante, to make modern wines mainly from traditional indigenous grapes. Hand-harvested from mature vines, the grapes are cool fermented before a brief maturation in French oak. Deep violet-tinged crimson, this wine offers a pleasing balance between youthful vigour and polished maturity. Bramble and cherry combine with lightly savoury spice and balsamic flavours. A great match for rustic Mediterranean stews.
